Growing up in Texas, I never knew the joy that is making snow ice cream. Even when we did get snow (which I can count on one hand the number of times that happened), there was barely enough to cover the grass, let alone provide for this delicious experience. Thankfully, I moved to New England as an adult and, now, I have a new hobby for those stay-at-home snow days that are inevitable at least a couple times a year!
Because I’m from Texas, and it’s not a meal unless it has meat in it! This is my classic, go-to meat sauce to pair with whatever pasta I have in the house (in this case, fresh cheese ravioli from the fridge). It’s great to cook in larger quantities to keep as left-overs or freeze for future use.
This is one of my favorite recipes, and it comes to you courtesy of my sister-in-law! It was a cold, Halloween night, and she served a group of us these simple pork tacos on corn tortilla shells while we sat on the front porch handing out candy to the local neighborhood kids. I fell in love!
