Yellow Rice with Peppers and Onion

Turmeric is fast becoming one of my favorite spices. (And no surprise, it’s a relative of another favorite of mine…ginger!) It provides several health benefits (including anti-inflammatory and antioxidant effects) and adds a beautiful color to food. So, of course, I had to try my hand at a yellow rice recipe. Not to mention, turmeric tastes so yummy! Many different spice combos can make a delicious Latin rice. This recipe is only one, but is a great one to keep handy if diced peppers and onion are a regular part of your weekly food prep routine!

Many Uses for Peppers and Onions

If you’re like me, you love to food prep each week. And peppers and onion are a frequent food that passes through our kitchen (and our mouths!). These colorful, crisp, delicious, healthy veggies are good in SO many dishes. Hummus platters. Egg scrambles and omelets. Soups and salads. Yellow rice. 😉 Whether raw or cooked, peppers and onions are a fan favorite at our house!

Cooking Yellow Rice via Stove top vs Instant Pot

Any chance I can find to use my instant pot, I will! We currently have a Smart WiFi Instant Pot at our house, and it is a key appliance in my kitchen. It’s easy to use, easy to clean, and so versatile, I love it so much! Plus, this specific multi-cooker is controllable from your smartphone, which makes it super easy to monitor and manage while you’re running around doing other things in the kitchen or around the house.

Rice dishes like this Yellow Rice with Peppers and Onions cook so quickly in an instant pot, dinner is literally ready in just minutes (especially if you want to make a larger quantity). However, I will admit that I still sometimes cook rice on the stove. So, regardless of your equipment setup, I have included both the instant pot and stove top cooking instructions for this recipe! The only difference in ingredients is the amount of broth you need for each setup (details are in the recipe card below).

The peppers and onion in this yellow rice recipe infuse key flavors during cooking that create a complex flavor profile that pairs well with many proteins. A great recipe to keep handy if diced peppers and onion are a regular part of your weekly food prep routine.

Ingredients

  • 2 tsp ground turmeric

  • 1 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1/2 tsp salt

  • 1 tbsp olive oil (or butter if you prefer)

  • 2 cups Jasmine rice

  • 1-2 cups mixed peppers and onions (diced)

  • For Stove Top
  • 4 cups broth (chicken or vegetable)

  • For Instant Pot
  • 2 cups broth (chicken or vegetable)

Directions

  • For Stove Top
  • Add the turmeric, cumin, coriander, salt, and broth to a medium-sized pot and stir until well combined.
  • Add the rice, peppers, onion, and olive oil (or butter) to the inner pot and stir until fully covered and submerged by the spiced broth.
  • Bring the rice mix to a boil over high heat.
  • Reduce heat to low and cover. Cook for 20 minutes.
  • Remove from heat and let it sit, covered, for 10 minutes.
  • Fluff the rice with a fork. Serve and enjoy!
  • For Instant Pot
  • Add the turmeric, cumin, coriander, salt, and broth to the inner pot and stir until well combined.
  • Add the rice, peppers, onion, and olive oil (or butter) to the inner pot and stir until fully covered and submerged by the spiced broth.
  • Secure the lid and set the pressure valve to the “sealing” position. Set the instant pot to pressure cook on High Pressure for 9 minutes.
  • Once the rice is done cooking, immediately move the pressure valve to the “venting” position to quick-release the pressure.
  • Once fully vented, remove the inner pot. Fluff the rice with a fork. Serve and enjoy!

Notes

  • To add a boost of flavor, saute the dry spices until fragrant before mixing with the broth.
  • To add an extra boost of flavor, use a flavor infused olive oil (my fav is garlic olive oil!).
  • To add even more flavor, use a variety of peppers (colors, spice levels, etc.).
